Split one open and add butter and jam, or top with sweetened yogurt and fresh fruit. There are no wrong choices!
Start by whisking your eggs and milk in a large pitcher with a spout until frothy. You can also do this in a blender or using a stick blender.
Whisk in your flour, powdered sugar, and salt, whisking just until smooth. Let rest for at least 15 minutes.

Divide the batter among all of the wells and bake in a 450°F oven for 10 minutes. NO PEEKING!
They will be big and puffy. If you want them darker or a bit crispier, place on a higher rack for another 1 to 2 minutes.
I like to dust mine with powdered sugar and top with sweetened yogurt and fresh fruit. Maple syrup is also a treat!
