INGREDIENTS

Streusel Topping – unsalted butter – brown sugar – all-purpose flour – pumpkin spice

Preheat oven to 425°F and butter or spray a 9 inch loaf pan and line with parchment paper for easy removal. In a medium bowl whisk brown sugar, flour, and pumpkin spice.

Cut in the butter using your fingers or a pastry blender, until it easily clumps together when pressed in your hand and then breaks apart easily into large and small clumps. Set aside.

In a large mixing bowl combine flour, brown sugar, pumpkin spice, baking powder, baking soda, and kosher salt. Set aside.

In a separate medium bowln, use a fork or potato masher to mash bananas until just a few lumps remain.

Add eggs, Greek yogurt, oil, and vanilla extract to your mashed banana and whisk together.
