Ingredients

First we are going to partially cook  (par-cook) our potatoes.  This is the restaurant secret to crispy potatoes that are crispy outside without being mushy on the inside

Place your potatoes in a microwavable bowl with 2 tablespoons of water and cook on high for 5 to 7 minutes

Dry them off on paper towels. This dries the surface and also roughs it up a bit, which makes them crisp up better

Put into a hot skillet with equal parts butter and oil. Season with your favorite seasonings

Leave them alone for 5 minutes to allow a crispy crust to develop. Flip and leave them alone some more

Continue to flip every 5 minutes until they are crsipy all over, about 10 to 15 minutes total
