Grits, Greens, and Black Eyed Peas are a traditional Southern  New Year's dish that takes hours to prepare.  With this recipe you can have those delicious flavors all year round in a fraction of the time!

Start by making your grits in milk and water. You'll finish them with butter, cream, and lots of cheese and cover to keep warm

Next sauté your andouille sausage along with shallots and garlic. No shallots?  Use onions!

Add collard greens and chicken broth. Toss to wilt greens and reduce broth, 4 to 5 minutes.

Finally, add in your black eyed peas, thyme, and some chopped tomatoes and warm through.

Serve on top of your cheesy grits and get swept away in this updated taste of the South!
