Start making your Banana Nut Muffins by toasting your walnuts in a 350°F oven for 5 minutes. If you don't like nuts, forget about 'em!

Next combine finely chopped untoasted nuts with all the other streusel ingredients.

Combine with your fingers until it looks like crumbly, like this.

Next, mash two medium sized ripe bananas, about 1 cup.

Add the eggs, vanilla, and Greek yogurt to the bananas and mix.

Begin folding in the dry ingredients, but not all the way...

this is when you add the butter, oil, and walnuts and gently fold together.

Scoop the batter into your muffin pan.

Top each one with about a tablespoon of streusel

Bake for 5 minutes at 425°F and then 20 minutes at 350°F.
