Start making an easy crust by blending your butter into your flour right in your food processor

Drizzle in ice water and pulse just until it comes together

Wrap in plastic wrap and keep rest in the fridge at least an hour, and up to 3 days

Next you'll make your almond cream. You can make it up to a week ahead!

Cut your pears in 1/4 inch slices, leaving the top of the pear uncut

Roll out your dough to a 14 inch circle

Use the lid of a pot, or a large bowl, to press a 10 inch circle on your crust, This will serve as a border for your fillings

Next, spread your frangipane evenly on the crust

Begin placing your pears, fanning the slices out decoratively

Fold your crust up to hug the edges of your filling

Egg wash the exposed edges of the crust and sprinkle with sliced almonds

Bake until the frangipane is set and the crust is golden brown

Slice and enjoy!
