Ingredients

For the Base

  • 6 ripe avocados halved and pitted
  • 1 loaf whole grain bread sliced
  • 6 mini bagels sliced

Suggested Toppings

  • 4 campari tomatoes sliced ¼ inch thick
  • 1 English cucumber or other thin-skinned cucumber, sliced
  • 1 red onion thinly sliced
  • ½ cup feta or goat cheese crumbled
  • 4 oz smoked salmon thinly sliced
  • 4 oz salami or deli meats, thinly sliced
  • Fresh herbs basil, cilantro, or chives
  • Flaky sea salt, black pepper, red pepper flakes, and everything bagel seasoning

Extras:

  • Olive oil for drizzling
  • Lemon or lime wedges for squeezing

Instructions

  • Prepare the Avocado: Scoop 2 avocados into a bowl and mash with a fork, adding salt, pepper, and a squeeze of lemon or lime juice to taste. Dice 2 of the avocados and toss with lime juice, and thinly slice the last 2 avocados.
  • Toast the Bread: Toast the slices of bread until golden and crisp. Toast mini bagels. Cut the toast into halves or quarters for easy serving, and place them with the bagels on each side of the board.
  • Assemble the Board: Place the sliced avocado in the center of the board and brush with lime or lemon juice to keep from browning. Place the mashed and diced avocado in small bowls on the board. Arrange vegetables, proteins, and cheeses around the avocados.
  • Add Finishing Touches: Place other spreads like hummus, cream cheese, and ricotta in small bowls on the board. Place lemon or lime wedges, olive oil, and a few small bowls of seasonings like salt, pepper, red pepper flakes, and everything bagel seasoning near the board. Have small bowl available for guests who prefer to make an avocado bowl, without bread.
  • Serve and Enjoy: Invite everyone to grab a piece of toast, a bagel, crackers, or a bowl, choose their favorite avocado, and add their favorite toppings.

Notes

Avoid food waste: Because your avocado board may be sitting out for a while, wrapping up and saving leftovers is not a good idea. To avoid food waste, only place a small amount of each topping on the board so that it is not overcrowded and everything is easy to get to. Have extras of each topping stored in the refrigerator for easy replenishing.
