Buttermilk Biscuit Mix (Homemade Bisquick)

Make up a batch of Buttermilk Biscuit Mix and just add milk whenever you want biscuits in a hurry. The perfect gift for busy friends - or your own pantry!

Ingredients

  • 4 cups all-purpose flour
  • ¾ cup buttermilk powder
  • 2 tablespoons baking powder
  • 1 ½ tablespoons sugar
  • 2 teaspoons salt
  • ½ teaspoon baking soda
  • 1 cup shortening or butter, butter flavored shortening, or lard

Instructions

  • Choose a method: stand mixer, food processor, or a bowl with a pastry cutter.
  • Combine the flour, buttermilk powder, baking powder, sugar, salt, and baking soda.
  • Add the cold fat and mix until the texture looks like coarse crumbs. Do not over mix. There should still be small pieces of fat visible.
  • Transfer to an airtight container. Store in fridge for up to 3 months or freezer for up to six months.

To Make One Batch of Biscuits

  • Preheat oven to 450 F. Line a large baking pan with parchment or foil.
  • Combine 2 cups biscuit mix with ⅔ cup milk. Mix until a cohesive dough forms. Add 1 tablespoon milk if needed.
  • Roll or press the dough to ½ to ¾ inch thick. Cut biscuits straight down and up.
  • For drop biscuits, add 1 to 2 more tablespoons of milk and scoop with a medium scoop.
  • Brush with milk or egg wash. Bake 12 to 15 minutes or until golden. Brush with melted butter.

Notes

  • This recipe makes 6 cups of baking mix, enough for about 48 two inch biscuits, or enough to fill 3 pint sized jars for gifting.
  • When making a batch of biscuits, if your mix is too wet, add one or 2 tablespoons of flour.
 
  • Make drop biscuits - Add 1 to 2 more tablespoons of milk to make a stickier dough that holds together better when scooped out onto your baking sheet. Bake the same as rolled and cut biscuits.
  • Make pancakes - Combine 2 cups of mix with 2 teaspoons of sugar and add 1 cup of milk, 2 eggs, 2 tablespoons of oil or melted butter, and a teaspoon of vanilla. Portion into a nonstick pan over medium-low heat. Turn when bubbles appear on surface of pancakes.
  • Make waffles - Combine 2 cups of mix with 1 tablespoon of sugar and add 1 cup of milk, 2 eggs, a teaspoon of vanilla, and 3 tablespoons of oil or melted butter. Portion into your waffle maker and close lid. Cook until your waffle maker indicates time is up.
