- 4 slices sandwich bread thick sliced or Texas toast
- 2 tablespoons unsalted butter softened
- ½ cup mozzarella cheese shredded
- ½ cup Parmesan cheese finely grated
- ½ cup Romano cheese finely grated
- 3 tablespoons mayonnaise
- Flaky sea salt for finishing
- Finely chopped fresh parsley for garnish
Place a large sheet pan in the oven and preheat the oven to 400°F. Allow the pan to heat along with the oven.
Spread a thin layer of softened butter over one side of each slice of bread. Place the slices buttered-side down on a piece of parchment paper or foil while you prepare the topping.
In a medium bowl, combine the mozzarella, Parmesan, Romano, and mayonnaise. Stir until the cheeses are evenly coated and the mixture holds together.
Divide the cheese mixture evenly between the 4 slices of bread, about ⅓ cup per slice. Spread the mixture all the way to the edges.
Carefully remove the hot sheet pan from the oven. Transfer the bread directly onto the hot pan with the buttered sides facing down.
Bake for about 15 minutes, or until the bottoms are crisp and golden and the cheese on top is melted, bubbling, and beginning to brown.
Remove from the oven and sprinkle lightly with flaky sea salt and chopped parsley. Serve immediately.
Bread: Thick-cut bread works best because it can support the generous cheese topping while staying crisp underneath. Homemade sandwich bread, Texas toast, or another thick-sliced bread are all great options.
For cheesy garlic toast: Add ¼ to ½ teaspoon garlic powder to the cheese mixture, or finely grate 1 small garlic clove directly into the mayonnaise before mixing it with the cheeses.
Hot sheet pan: Don't skip preheating the pan. Placing the buttered bread directly onto the hot metal immediately begins to toast the bottom, giving the cheese toast its especially crisp crust.
