Easy Mushroom Crepes with Swiss Cheese

Rosemary-garlic Mushrooms

  • 4 slices bacon diced (optional)
  • 2 tablespoons butter divided
  • 2 tablespoons olive oil divided
  • ½ cup shallots finely diced (or red onion)
  • 1 rosemary stem
  • 8 ounces cremini mushrooms sliced thin
  • 2 cloves garlic grated
  • Salt and pepper to taste

For Assembly:

Garnish

  • Reserved rosemary-garlic mushrooms
  • Grated swiss cheese or more shredded cheese
  • Chopped chives

Instructions

  • Cook bacon in a large skillet if using. Remove with a slotted spoon and reserve drippings in pan.
  • Add 1 tablespoon butter, 1 tablespoon olive oil, and shallots. Cook 2 minutes.
  • Add rosemary stem and cook 1 minute.
  • Add mushrooms, remaining butter, and remaining olive oil. Cook until mushrooms are browned and tender, 5 to 6 minutes.
  • Stir in bacon if using. Add garlic and cook 1 minute. Season with salt and pepper. Remove rosemary stem.
  • Lay one crepe flat. Add Swiss cheese and mushroom filling. Reserve some mushrooms and cheese for garnish, if desired.
  • Fold into quarters.
  • Heat skillet over medium heat. Add filled crepe and cover. Cook 1 to 2 minutes until crisp and cheese melts.
  • Flip and cook second side until golden.
  • Repeat with remaining crepes.
  • Garnish with reserved mushrooms, cheese, and chives. Serve warm.
