Easy Seeded Rye Sandwich Bread

This Soft Seeded Rye Bread has classic caraway flavor with a tender crumb, perfect for sandwiches and toast and is ready in about 90 minutes.

Ingredients

  • ¾ cup milk warmed to 110°F
  • ¾ cup water warmed to 110°F
  • 2 tablespoons honey warmed until pourable
  • ¼ cup vegetable oil
  • 3 tablespoons caraway seeds
  • 3 ¼ cups bread flour plus up to 2 tablespoons if needed
  • ¾ cup rye flour I prefer medium rye
  • 1 ½ teaspoons kosher salt
  • 1 tablespoon instant yeast
  • 1 egg for egg wash

Instructions

  • Heat milk, water, and honey until steaming but not boiling. Stir in caraway seeds and oil. Let cool to 115°F or until just warm.
  • Combine bread flour, rye flour, salt, and yeast in a large bowl or stand mixer bowl.
  • Add warm liquid mixture and stir until a rough dough forms. Place on stand mixer.
  • Knead for 6 to 7 minutes until smooth and pulling away from the bowl. It will be slightly sticky. If kneading by hand, knead for 6 to 7 minutes, or until smooth and slightly sticky.
  • Shape into a ball, place in a greased bowl, cover, and let rise for 20 minutes.
  • Flatten into a rectangle, fold sides in, and roll into a tight log.
  • Place seam side down in a greased 9 inch loaf pan. Cover and let rise while oven preheats to 375°F.
  • Brush with egg wash and slash the top 3 times diagonally about ¼ inch deep.
  • Bake 30 to 35 minutes, until internal temperature reaches 190°F to 200°F.
  • Cool 5 minutes in pan, then transfer to a rack to cool completely before slicing.

Notes

  • Be sure liquids are not hotter than 115°F to protect the yeast.
  • For a more dense rye loaf, use 1 cup rye flour and reduce bread flour to 3 cups.
  • Store at room temperature up to 3 days or freeze sliced for up to 3 months.
