Lemon Ricotta Waffles with Blueberry Swirl

These Lemon Ricotta Waffles are crispy on the outside and fluffy inside with bright lemon flavor and sweet ribbons of blueberry jam. Perfect for an everyday breakfast or weekend brunch.

Ingredients

Whipped ricotta (optional)

  • ½ cup ricotta cheese
  • 2 tablespoons cream cheese
  • 1 tablespoon honey
  • Pinch salt

Dry ingredients

  • Zest of one lemon
  • 3 tablespoons sugar
  • 1 ½ cups all purpose flour
  • ½ cup cornstarch
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine grain kosher salt

Wet ingredients

  • 1 cup buttermilk
  • ½ cup whole milk
  • ½ cup ricotta
  • ¼ cup unsalted butter melted
  • ¼ cup vegetable oil
  • 3 tablespoons lemon juice
  • 2 eggs

Instructions

  • Use your finger, or a spatula, to rub lemon zest into the sugar in a large bowl.
  • Whisk in flour, cornstarch, baking powder, baking soda, and salt.
  • In another bowl whisk buttermilk, milk, and ricotta until smooth.
  • Add melted butter, oil, lemon juice, and eggs. Whisk well.
  • Stir wet ingredients into dry until mostly combined.
  • Stir in blueberries and let batter rest 15 minutes. Save some blueberries for garnishing the top of your waffles.
  • Dollop blueberry jam on top and swirl gently. Save some blueberry jam for serving.
  • Cook batter in a preheated waffle maker for about 4 to 5 minutes, or until your waffle maker says they are done..
  • Keep waffles warm in a 200°F oven until serving.

Notes

  • Cornstarch helps create crispy waffles. If you don't want to use cornstarch, you can replace with an equal volume of all-purpose flour. 

  • Letting the batter rest improves waffle texture. 

  • Do not overswirl the jam or the color will fully mix into the batter, turning them a purpleish-grey color.
Storage:
Store leftover waffles in the refrigerator for up to 3 days.
Reheating:
Reheat in a toaster or a 375°F oven until crisp. Freezing
Freeze cooked waffles for up to 2 months.
