Raspberry Rose Parfaits

  • 1 cup Greek yogurt
  • 1 teaspoon rose water
  • 1 tablespoon honey
  • ¼ cup raspberry preserves or jam
  • ½ cup fresh raspberries plus extra for garnish
  • ½ cup homemade granola or store-bought
  • Optional: Edible dried rose petals for garnish

Instructions

  • In a food processor, or with a hand mixer in a medium bowl, combine the Greek yogurt, rose water, and honey. Pulse until smooth and well-mixed. Taste and adjust with more honey or rose water if desired.
  • Divide the yogurt mixture between two small glasses or bowls. Follow with a couple of spoonfuls of raspberry preserves or jam, spreading it gently to cover the yogurt layer.
  • Place a few fresh raspberries on top of the preserves, then add a layer of granola.
  • Top each parfait with another dollop of yogurt, a few more fresh raspberries and, if desired, a pinch of edible dried rose petals for an extra floral touch.
  • Chill or serve immediately: You can serve these right away or refrigerate them for up to 1 to 2 hours to let the flavors meld together. Just be sure to add the granola right before serving to keep it crunchy.

Making raspberry rose refrigerator jam: To make a small batch of raspberry jam with rosewater, combine 1 cup of fresh or frozen raspberries, cup of sugar, and a small squeeze of lemon juice in a small saucepan. Simmer over medium-low heat, stirring often, until the berries break down and the jam thickens, about 10 to 15 minutes.
Remove from heat and stir in ¼ to ½ teaspoon of rose water, depending on your taste. Let it cool completely, then store in a jar in the fridge for up to two weeks. Perfect for parfaits, toast, or a fancy little swirl in your yogurt!
Using frozen fruit: Frozen fruit can work in your parfait too, but it might release some moisture as it thaws. To avoid making your parfait too runny, let the frozen fruit thaw slightly and drain excess liquid before layering.
Storage: Store yogurt mixture in an airtight container in the fridge for up to 3 to 4 days. Make sure to stir before using, as the honey might settle at the bottom. An assembled parfait (without granola) can last 1 to 2 days in the fridge in covered containers. However, the granola should be added just before serving to keep it crunchy.
