For the Lemon Simple Syrup
- 1 cup fresh lemon juice (from about 4 lemons)
- 1 cup sugar
- ½ cup water
Lemon Elderflower Mocktail
- 2 tablespoons lemon simple syrup
- ½ cup sparkling elderflower soda Belvoir or Fever-Tree
- 1 tablespoon fresh lemon juice squeezed from one lemon wedge
- Ice
- Lemon slices for garnish optional
Make the Lemon Simple Syrup
In a small saucepan, combine the lemon juice, sugar, and water.
Heat over medium, stirring until the sugar fully dissolves, about 2–3 minutes.
Let cool completely before storing in a jar with a lid for up to a week.
Build the Mocktail
Fill a glass with ice.
Add the lemon simple syrup and fresh lemon juice.
Top with sparkling elderflower soda.
Stir gently to combine.
Add a slice of lemon and a sprinkle of flower sprinkles, for a pretty finish.
Storage: Lemon simple syrup will last about 1 to 2 weeks in the refrigerator stored in a clean, airtight container.
Batch mocktails: In a large pitcher, combine ¾ cup of lemon simple syrup with ⅓ cup of fresh lemon juice. Just before serving add 3 cups of sparkling elderflower soda and stir gently. Fill glasses with ice, pour over the mocktail, and garnish with lemon slices.
