Sheet Pan Denver Omelette

This Sheet Pan Denver Omelette is an oven baked take on a classic made with eggs, ham, peppers, onions, and cheddar, but baked in a sheet pan for quick and easy meals.

Ingredients

  • cups frozen peppers and onions chopped
  • 4 ounces ham diced
  • 6 large eggs
  • ¼ cup heavy cream or half and half
  • 3 ounces cheddar cheese shredded
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  • Turn the broiler on high and position the oven rack at least 12 inches from the element.
  • Spray a quarter sheet pan with nonstick spray and scatter the peppers, onions, and ham evenly. Season with a little bit of salt and pepper.
  • Broil for 3 to 5 minutes until lightly charred. Remove from the oven and reduce temperature to 375°F.
  • Whisk the eggs, cream, salt, and pepper until smooth.
  • Pour the egg mixture gently over the vegetables and ham using the back of a spoon.
  • Sprinkle cheddar evenly over the top.
  • Bake for 18 to 20 minutes until a knife inserted in the center comes out clean.
  • Let cool slightly before slicing and serving.

  • The omelette will puff in the oven and settle as it cools.
  • For higher protein, replace the cream with blended cottage cheese.
  • Store leftovers in the refrigerator for up to 4 days.
