- 1½ cups frozen peppers and onions chopped
- 4 ounces ham diced
- 6 large eggs
- ¼ cup heavy cream or half and half
- 3 ounces cheddar cheese shredded
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Turn the broiler on high and position the oven rack at least 12 inches from the element.
Spray a quarter sheet pan with nonstick spray and scatter the peppers, onions, and ham evenly. Season with a little bit of salt and pepper.
Broil for 3 to 5 minutes until lightly charred. Remove from the oven and reduce temperature to 375°F.
Whisk the eggs, cream, salt, and pepper until smooth.
Pour the egg mixture gently over the vegetables and ham using the back of a spoon.
Sprinkle cheddar evenly over the top.
Bake for 18 to 20 minutes until a knife inserted in the center comes out clean.
Let cool slightly before slicing and serving.
- The omelette will puff in the oven and settle as it cools.
- For higher protein, replace the cream with blended cottage cheese.
- Store leftovers in the refrigerator for up to 4 days.
