Cranberry purée
- ¾ cup cranberry sauce
- ¼ cup unsweetened cranberry juice
Rosemary simple syrup
- ¾ cup granulated sugar
- ¾ cup water
- 2 sprigs rosemary about 2 inches each
Sparkling beverages
- 25 ounce bottle sparkling apple cider
- Seltzer
To make mocktails
- 1 tablespoon cranberry purée
- 1 tablespoon rosemary simple syrup
- 3 ounces cranberry juice
- 3 ounces sparkling apple cider
- 1 ounce seltzer
- Cranberries to garnish
- Rosemary sprigs to garnish
Cranberry purée
Use an immersion blender, small food chopper, or personal blender to purée ¾ cup of cranberry sauce with ¼ cup of unsweetened cranberry juice until fairly smooth and pourable. Store the purée in an airtight container in the refrigerator for up to 2 weeks.
Make individual mocktails
Spoon one tablespoon purée into a tall glass. Add one tablespoon of rosemary syrup.
Add ice cubes and fill the glass ⅔ full with unsweetened cranberry juice.
Fill almost to the top with sparkling apple cider. Top with sparkling water or club soda.
Garnish with a sprig of fresh rosemary and a few fresh cranberries. Stir with a long straw, sip, and enjoy!
Important note: The measurements shown above are approximations that may vary based on the size of the glass you are using. I used an 8 ounce Champagne flute. If using a larger container, adjust the amounts of each of the ingredients.
Store the syrup in an airtight container in the refrigerator for up to a month.

If you don't want to make a purée, you can add a little cranberry sauce to the bottom of your glass and use a muddler to break up any large pieces of fruit.
