Start by making the herb butter that will season your accordion potatoes

Preheat your oven and sheet pan to 425°F

Next slice your potatoes into 1/4 inch planks. I get 3 per potato

Place planks in cold water after slicing

Place skewers on each side of a slice of potato and make vertical slices.

The skewers keep you from slicing all the way through!

Flip your plank over and slice diagonally, at about a 45° angle

Give them a gentle twist and admire your lattice cut accordion potatoes!

Place back into the cold water until it's time to season and bake

Next you'll dry off your potatoes and brush both sides with the seasoned butter

Continue baking for  12 to 15 minutes

Now give them a flip!

Remove when they're sizzling and crispy! Garnish with flaky salt and chives

So crispy!
