eggs mascarpone cheese heavy cream unsalted butter kosher salt soft herbs

Start by whisking your eggs, cream, and mascarpone together (if you don't have mascarpone, use cream cheese)

Melt some butter in a nonstick pan set over medium-low heat

Add your eggs and give them a few seconds to relax in the pan

Use a silicone spatula to scrape the cooked egg off the bottom and sides, allowing uncooked egg to settle onto the surface

When they are almost done, but still moist and shiny, dollop more mascarpone over top of the eggs

Gently fold the eggs over the cheese to melt

Serve immediately and garnish with fresh herbs if you're feeling fancy like me
