russet potatoes olive oil salt black pepper fresh hertbs (optional)

Start by slicing your potatoes very thin by hand or with a mandoline. I prefer russets for this recipe.

Place into a bowl and toss with olive oil, salt, pepper, and some herbs, if you like. I love fresh thyme, but rosemary is  delicious too!

Lay the potatoes on a greased sheet pan in a single layer, overlapping in a shingle pattern.

Bake at 425°F for 30 to 40 minutes, or until crispy on the edges and tender in the middles.

I like to serve them with a little sour cream and chives for a sour cream and onion vibe. Equally delicious with scrambled eggs or as a dinner side dish!
