Start by seasoning your potatoes (I give lots of  options) and roasting them into the oven for 20 minutes total

Whle those are roasting, start sautéing your vegetables, adding more of the same seasoning that you used on your potatoes

Add the meat and sauté, letting it sit for a few minutes so the edges can caramelize and crisp up a bit

Then add in the potatoes, allowing everything time on the bottom of the pan before flipping

Now would be the time to add any leafy veg, like kale or spinach so it can wilt in the hash

Serve alone, or add an egg - or two!
