Tender and Flaky


all-purpose flour baking powder baking soda sugar kosher salt unsalted butter buttermilk Swiss cheese ham egg honey

Use your fingers, or a pastry cutter, to cut the butter into the dry ingredients. Toss in some of your swiss cheese.

Add in cold buttermilk and mix until you have a shaggy dough.

Use your hands to pile up and push the dough together until you can pat it into a big square.

Use a bench scraper or knife to divide the big square into four smaller squares.

Sprinkle ham and more swiss on top of three of the four squares.

Stack the dough together, plain one on top, and then press it all down again into a large square.

Repeat this cut and stack technique two more times, for a total of three cut and stacks.

Cut biscuits out and place on a parchment lined baking sheet.

Brush with egg wash and bake at 450°F for 18 to 20 minutes.

Brush with melted honey butter and sprinkle with flaky sea salt for the perfect salty/sweet combo.
