Start your Creamy Ricotta Scrambled Eggs by adding fresh ricotta to room temperature  eggs

Whisk together until the yolks and the whites are completely combined and you can only see small bits of  ricotta

If you want your eggs to be extra fluffy, try using an immersion blender or hand mixer to aerate the mixture

Your eggs will lighten in color and be foamy

Melt butter in a nonstick pan over medium heat

Pour in your eggs and immediately turn the heat to medium-low

Cook your eggs by scraping a spatula over the bottom and sides to gather cooked egg

Remove the pan from the heat and dollop on the remaining ricotta. Fold into the eggs and serve immediately
