Breakfast BLT with Egg

- 8 slices crispy bacon cooked (see notes)
- 4 slices bread perferably soft white or soft wheat
- 4 tablespoons mayonnaise
- 6 leaves green leaf lettuce
- 1 tomato
- 1 avocado (optional) pitted and sliced
- 2 fried eggs made to order (see notes)
- Salt and pepper to taste
Place your bacon strips on a parchment paper lined baking sheet in a 400° oven for about 20 minutes, flipping the bacon over halfway through the baking time. Drain on paper towels.
Lightly toast your bread selection. You don't want it to be over toasted. You want it to still be a little bit soft. Spread mayonnaise on both pieces.
Place your lettuce on top of the bottom slice, using the mayonnaise to glue it down, and making sure that there are folds throughout to hold the next ingredients.
If you are going to use avocado, you'll see how nicely it fits into the wavy folds of lettuce. That avocado is not going anywhere. Put salt and pepper on it.
Place two slices of tomato onto your avocado, or on top of the lettuce if you are skipping the avocado. Season it with salt and pepper.
Place your bacon on top of the tomato, crisscrossing the pieces so that you have maximum bacon in every bite and they hold each other in place.
Place a perfectly fried egg on top of the bacon. Season it with salt and pepper. The weight of the egg will hold the bacon down.
Place the top piece of toast on and slice your BLT in half however you please. Gaze upon its beauty and take a big bite!
To cook bacon without oven: you can cook the bacon using your preferred method. I occasionally love myself some pre-cooked microwave bacon that is done in 30 seconds. Sue me.
To fry egg: in a nonstick pan over medium high heat cook your egg for one minute. Cover the pan with the lid and cook for one more minute. That should give you a perfect sunny side up egg. Flip over and cook for 10 to 15 seconds for over easy. Cook longer for over medium.
Make ahead lunch: make a BLT ahead of time and keep it refrigerated or in a cooler with an ice pack. Because cold bread on a sandwich makes me sad, about 30 minutes before lunch, take the sandwich out of the refrigerator or cooler to let it come to room temperature. If you don't like a cold egg, leave it off or you could microwave it for about 15 seconds to take the chill off.
