I am never not craving a Breakfast BLT. Add a perfectly fried over-medium egg and a couple of slices of avocado and you have just described my ideal breakfast, lunch, or even dinner. Did I mention that I am always craving a BLT?
One of the most important things to me, when making a BLT sandwich, is sandwich architecture. There's nothing worse than biting into a sandwich and having parts of it slide out. I have built this BLT in a way that keeps everything in place when you take a bite, and that my friends is the secret to a delicious breakfast. Let's get started on this delicious twist on a classic BLT.

Ingredients & Substitutions
There's nothing earth shattering about these fried egg BLT ingredients, but I have a reason for each choice. Let's chat about them, why I picked them, and how you can let your sandwich flag fly:
- Bread - I am a believer, that soft white bread, a soft wheat, or even brioche bread is the perfect bread for a breakfast BLT. You don't want to start your day biting into a sandwich made with slices of bread that are going to scratch up the roof of your mouth, be difficult to bite through, or have a flavor that's going to overwhelm the bacon.
- Bacon - I love the smoky flavor of bacon, but for the best breakfast BLT I prefer thinly sliced bacon. I know some sandwich connoisseurs will insist upon a thick slab or artisanal bacon, but I find that thin sliced bacon is the best. I prefer to cook my bacon in the oven so that it cooks evenly and pull it out just short of super crispy. I have also been known to enjoy microwave bacon on my BLT. Don't judge. Cook your bacon however you like.
- Eggs - Whether you prefer a runny yolk, a jammy yolk, or even sliced hard-boiled eggs, I've got an egg recipe for you!
- Tomato - Slices of tomato that are not too thick and not too thin, about a quarter inch thick, and placed on paper towels to absorb excess liquid is the perfect slice of BLT tomato. And don't forget to season it with salt and pepper.
- Mayonnaise - I'm not a huge mayonnaise girl. I don't know how the boy and I have lasted 34 years together when I don't share his absolute love affair with mayonnaise. That being said, I feel that a BLT needs mayonnaise for the sweetness, the tanginess, and to be the glue that holds everything together. Confession: sometimes I like spicy mayo.
- Lettuce - For me the perfect lettuce for a BLT is a leafy green lettuce. Something with waves and folds in it. Not flat and pokey like iceberg and romaine lettuce. It will have the perfect soft but crispy bite while also providing a stable bed for the other ingredients. Microgreens also work fabulously.
- Avocado - the first time I ever had avocado on a BLT was at IHOP and it was life-changing. This is optional, but the additional creaminess that it adds is amazing.

Egg cookery
The boy and I enjoy an over medium egg on our BLT egg sandwiches. It has a jammy center that still adds a little runny yolk to the sandwich without leaving our hands messy, but that's just our preference. My perfect fried egg recipe will show you how to make your favorite kind of egg whether that's sunny side up, over easy, or over medium. You could even make some creamy scrambled eggs and pile them into of your sandwich if you like
Step-by-step Instructions
Is there anything that ruins the perfect breakfast BLT, or any sandwich, more than when it falls apart? It doesn't matter how delicious all the ingredients are, if they fall out onto the plate, the floor, or your lap, it's ruined. Right? When it comes to sandwich building, I'm revealing all the secrets. It's all in the way you place everything that holds the sandwich together bite after bite.
Step 1: To cook bacon in the oven place your bacon strips on a parchment paper lined large sheet pan.
Step 2: Bake in an oven preheated to 400°f for about 20 minutes, flipping the bacon over halfway through the baking time.
Step 3: Lightly toast your bread to a golden brown. You don't want it to be over toasted. You want it to still be a little bit soft. Spread mayonnaise on both pieces.
Step 4: Place your lettuce on top of the bottom slice, using the mayonnaise to glue it down, and making sure that there are folds throughout to hold the next ingredients.
Step 5: If you are going to use avocado, you'll see how nicely it fits into the wavy folds of lettuce. That avocado is not going anywhere. Put some salt and black pepper on it.
Step 6: Place tomato slices onto your avocado, or on top of the lettuce if you are skipping the avocado. Salt and pepper.
Step 7: Place your bacon slices on top of the tomato, crisscrossing the pieces so that you have maximum bacon in every bite and they hold each other in place.
Step 8: Place a perfectly fried egg on top of the bacon. S&P it. The weight of the egg will hold the bacon down. Architecture.
Place the top slice of bread on the egg and slice your BLT in half however you please (see below). Gaze upon its beauty and take a big bite!
Controversial BLT slicing opinion
It’s basic BLT math: cutting a BLT down the middle, into two equal rectangles, gives you even bites all the way through. When you cut it diagonally the middle part is wider and when you go to bite you're going to get mayonnaise on your cheeks. You know it.
In addition, cutting a BLT horizontally, instead of diagonally, helps maintain sandwich integrity. A BLT sliced horizontally just holds on to the ingredients better. With less edge exposed, there’s less of a chance for important things like bacon, lettuce, tomato, or egg to slip out. End rant.
Serving suggestion
It's such and easy meal that I sometimes have breakfast BLT's for easy lunches, or even a quick dinner, and when I do, I like to sip an Iced French toast latte on the side. I'm out here living my best life.
Recipe FAQs
Absolutely. You can cook the bacon using your preferred method. I occasionally love myself some pre-cooked microwave bacon that is done in 30 seconds. Sue me.
My fried eggs recipe gives you all the scoop on egg cookery, or (tl;dr) in a nonstick pan over medium heat melt butter and cook your egg for one minute. Cover the pan with the lid and cook for one more minute. That should give you a perfect sunny side up egg.
The short answer is yes. You can make a BLT ahead of time and keep it refrigerated or in a cooler with an ice pack. Because cold bread on a sandwich makes me sad, about 30 minutes before lunch, take the sandwich out of the refrigerator or cooler to let it come to room temperature. If you don't like a cold egg, you could microwave it for about 15 seconds to take the chill off.

- 4 tablespoons mayonnaise
- 6 leaves green leaf lettuce
- 1 tomato
