Creamy Egg Bites (No Special Equipment Needed)
Make creamy Sous Vide Egg Bites at home without special equipment. Baked in a muffin pan with cottage cheese and veggies, ready in about 30 minutes.

- 8 large eggs
- ½ cup cottage cheese
- ½ cup heavy cream
- 1 cup Gruyere cheese
shredded
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 cup packed baby spinach
- 4 to 6 cup mini bell peppers finely diced
Preheat oven to 350°F and grease a muffin pan. Place it inside a large sheet pan or roasting pan.
Blend eggs, cottage cheese, heavy cream, Gruyere, salt, and pepper until smooth.
Add spinach and pulse just until incorporated.
Divide mixture among 12 muffin wells and top with diced peppers.
Bring 4 cups water to a boil. Place pan in oven and carefully pour water into the outer pan until halfway up the muffin wells.
Bake for 20 to 25 minutes until just set.
Let cool before removing from the muffin pan.
Most recipes bake at a lower temperature, but 350°F produces consistent results without sacrificing texture.
Storage and Reheating
Store refrigerated for up to 4 days. Reheat gently in the microwave. Freeze for longer storage if needed. Thaw overnight in the refrigerator and reheat in the microwave in 20 to 30 second intervals until warm.
