I make mine in a muffin pan, but unlike traditional muffin pan frittatas, which are baked directly in dry heat, these egg bites use a water bath to regulate temperature and prevent overcooking, resulting in a smoother, creamier egg.

Ingredients & Substitutions

- Eggs - Large eggs work best. Medium eggs will work, but avoid small or extra large as they can throw off the texture.
- Cottage Cheese - Full fat cottage cheese creates the smoothest blend, but ricotta can be used in a pinch.
- Heavy Cream - You can substitute half and half, though the texture will be slightly less rich. I don't know about you, I came here for the richness.
- Gruyere Cheese - Swiss cheese, white cheddar, or monterey jack cheeses are good alternatives.
- Baby Spinach - I would love to tell you that frozen spinach will work if squeezed out, but I tried it and it was kind of a disaster. OK if you're looking for green eggs, but I was not.
- Mini Bell Peppers - Any mild pepper works, but jalapeño will add a spicy kick. Or swap in finely diced sauteed mushrooms or onions in their place.

Step-by-Step Instructions
This recipe is simple and forgiving. Follow along with the process photos and you will be just fine.
- Step 1: Start by preheating the oven to 350°F. Grease a standard or silicone muffin pan and place it inside a large sheet pan or roasting pan.

Step 2: Add the eggs, cottage cheese, heavy cream, Gruyere, salt, and pepper to a blender. Blend until completely smooth.

Step 3: Add the baby spinach.

Step 4: Pulse just until broken down and evenly distributed. Don't blend completely or your eggs will turn green. Still delicious, but green.

Step 5: Divide the egg mixture evenly among the 12 muffin wells. I like to use a silicone muffin pan for easy removal after baking, but a standard muffin pan works too. Just be sure to thoroughly grease the inside of each opening.

Step 6: Top each with diced mini bell peppers.

Step 7: Bring about 4 cups of water to a boil. Place the pan into the oven, then carefully pour the hot water into the outer pan until it reaches halfway up the muffin wells.

Step 8: Bake for 20 to 25 minutes, until the eggs are just pulling away from the sides and a knife inserted in a center egg cup comes out clean. Let the egg bites cool about 5 minutes before removing them from the pan. Serve warm, or cool completely for storage and meal prep.
Removing Egg Bites from the Pan
Do not try to remove the egg bites while they are piping hot. The eggs and cheese are still very soft at that stage and can fall apart or cause sticking. A short rest gives the everything time to set slightly, which helps the egg bites release cleanly without tearing. Run a thin offset spatula or butter knife gently around the edge of each egg bite, then lift straight up and out.

- Do Not Overbake - Pull them as soon as they are set to avoid dryness.

Ingredients
- 8 large eggs
- ½ cup cottage cheese
- ½ cup heavy cream
- 1 cup Gruyere cheese

- 4 to 6 cup mini bell peppers finely diced
Instructions

I made a half batch of these using half and half instead of heavy cream. I put everything in my small smoothie blender since it was a small batch.
