Rosemary Peach Mocktail

This Rosemary Peach Mocktail is a delicious and refreshing summer drink. Made with homemade peach nectar, flavored with fresh rosemary, and topped off with sparkling water, it's a perfect non-alcoholic alternative that everyone will love!

Ingredients

Peach nectar

  • 2 ripe peaches
  • 2 sprigs rosemary
  • 1 cup water
  • 1 cup granulated sugar

Rosemary Peach Mocktail

  • 2 lime wedges
  • 2 ounces peach nectar plus more for the rim (optional)
  • Coarse sugar optional
  • 6 ounces sparkling water
  • Sprig of rosemary
  • Slice of peach

Instructions

To make peach nectar

  • Add two pitted and diced peaches to a small saucepan with sugar, water, and two sprigs of rosemary. Bring to boil and simmer until sugar is completely dissolved, about 5 minutes. Turn to medium-low and simmer for 10 minutes.
  • Remove from heat, cover, and let cool completely. Remove rosemary and use an immersion blender, high speed blender, or food processor to puree the contents.
  • Pour through a wire mesh strainer to remove all the solids.
  • Transfer to a clean jar and let cool completely before placing the lid on and storing in the refrigerator.

To make one peach mocktail

  • If you’re feeling fancy, dip the rim of a highball glass into a small dish filled with some peach nectar. Dip the rim into another dish with coarse sugar.
  • Place 2 lime wedges into the bottom of the glass. Muddle them to release the juices.
  • Add ice cubes to the glass. Pour in 2 ounces (4 tablespoons) of peach nectar.
  • Top with sparkling water.
  • Stir with a straw. Garnish with a wedge of peach and a sprig of rosemary.

Notes

Peach nectar storage: Peach nectar can be stored in the refrigerator in a clean jar with a lid for up to a week.
For longer storage: Portion peach nectar into the wells of a standard sized ice cube tray. When frozen solid, transfer to a zip top bag, and store for up to 6 months. Remove 2 cubes for each mocktail and let thaw on counter immediately before using.
To make a batch of mocktails: Fill a large pitcher full with ice. Add 2 cups of peach nectar and 2 ounces of lime juice (from 2 limes). Top off with sparkling water. Stir well before pouring into individual ice filled glasses. Garnish each one with peach wedges and rosemary sprigs.
