Nothing is better on hot Summer days than an ice cold refreshing Rosemary Peach Mocktail. August is prime peach season, and National Peach Month, so there's no better time to bring you this delicious and fun drink.
I make occasional live appearances on the daytime talk show New York Living in New York City, and I always like to start my segments by toasting the hosts with a cute little beverage. Made with homemade peach nectar, with a hint of garden-fresh rosemary, sparkling water, and a twist of lime, I just know they will love this perfectly sweet non-alcoholic Peach Spritz!

Ingredients & Substitutions
These are very simple ingredients and they make a truly exceptional peach mocktail. If you want to add a little somethin' somethin', that's totally up to you. I'm not your mom 🙃
- Peach nectar - If you want to enjoy a delightful peach mocktail, but don't want to make the peach nectar, you can still add peach flavor by using store-bought nectar or even peach juice.
- Sparkling water - I'm a Pellegrino girlie, but seltzer, club soda, ginger ale, or anything fizzy will do. If you want to cocktail it up, add a little champagne or prosecco for a peach bellini vibe.
- Sugar - If you want, you can make the peach simple syrup with agave nectar, honey, or even a sugar substitute.
- Lime - Any citrus will do. I love lime, but lemon, or even orange would be a great twist (pun intended).
- Rosemary - If you don't have fresh rosemary, you can use thyme, lavender, or even sage leaves. You can use fresh basil or mint, but add them after boiling and just allow them to steep until the syrup is cool.

Instructions
Making the peach nectar for your peach mocktail takes just a few minutes. I like to let the rosemary and the peaches steep in the syrup until fully cooled, but you can blend and strain it immediately if pressed for time. There will still be loads of flavor.
Making peach nectar
- Add two pitted and diced fresh peaches to a small saucepan with one cup sugar, one cup water, and two sprigs of rosemary. Bring to boil and simmer until sugar is completely dissolved, about 5 minutes. Turn to medium-low and simmer for 10 minutes.
Step 1: Remove from heat, cover, and let cool completely, about one hour. Remove rosemary.
Step 2: Use an immersion blender, standing blender, or food processor to puree the contents.
Step 3: Pour through a wire mesh strainer to remove all the solids.
Step 4: Transfer to a mason jar and let cool completely before placing the lid on and storing in the refrigerator.
Making a Peach Mocktail
- If you’re feeling fancy, dip the rim of a stemless wine glass into a small dish filled with some peach nectar. Dip the rim into another dish of coarse sugar.
Step 1: Place 2 lime wedges into the bottom of the glass. Use a muddler, or handle of a wooden spoon, to mash them to release the juices.
Step 2: Add ice cubes to the glass. Pour in 2 ounces (4 tablespoons) of peach nectar.
Step 3: Top with sparkling water.
Step 4: Stir with a straw. Garnish with peach slices and a sprig of rosemary.
Expert tip: Batch mocktails
I prefer to make my peach spritz one at a time so that each one has the perfect amount of nectar to sparkling water, but in a pinch you can make a large batch that will serve 8 to 10 people.
Fill a large pitcher ⅔ full with ice. Add 2 cups of peach nectar and 2 ounces of lime juice (from 2 limes). Top off with sparkling water. Stir well before pouring into individual ice filled glasses. Garnish each one with peach wedges and rosemary sprigs.
Recipe FAQs
No it's not a deal breaker. You can either strain the peaches out, resulting in a delicious peach simple syrup, or you can press them through a fine mesh strainer with the back of a spoon, making a lighter, but equally delicious peach nectar.
This recipe yields about 2 cups of peach nectar, or half a liter, depending on how large your peaches are and whether you choose to puree the peaches or strain them out.
Peach nectar can be stored in the refrigerator in a clean jar with a lid for up to a week.
Nothing will make the Winter blues disappear quicker than a refreshing Summer spritz. Portion peach nectar into the wells of a standard sized ice cube tray. When frozen solid, transfer to a zip top bag, and store for up to 6 months. Remove 2 cubes for each mocktail and let thaw in the glass before using.
