Yogurt Peach Parfait

Elevate your mornings with this simple Yogurt Peach Parfait. Honey vanilla yogurt is layered with brown sugar peaches and topped with crunchy granola. It comes together quickly and is easy to make ahead for a grab and go meal.

Ingredients

  • 2 cups diced peaches
  • 2 tablespoons brown sugar
  • 3 tablespoons honey divided; reserve 2 tablespoons for the yogurt
  • ½ teaspoon cinnamon optional
  • teaspoon nutmeg "a pinch"
  • 2 cups Greek yogurt
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla paste or extract
  • 1 cup homemade granola or store bought

Instructions

  • Wash and dice 3 to 4 peaches, which should give you about 2 cups. I never peel my peaches, but you can if you'd prefer.
  • In a small bowl, combine your peaches with 2 tablespoons of brown sugar and 1 tablespoon of honey, saving the rest for sweetening your yogurt if desired.
  • If you'd like, you can add ½ teaspoon of cinnamon and a pinch of grated nutmeg.
  • In another bowl, use a hand mixer, or a strong arm and a whisk, to mix your Greek yogurt with the remaining two tablespoons of honey, a teaspoon of vanilla until smooth, and 2 tablespoons of heavy cream until light and fluffy.
  • Note: you can keep your yogurt plain, or if using thin yogurt skip the heavy cream and just sweeten with a little honey.
  • Use a spoon or a piping bag to place some yogurt cream in the bottom of a glass.
  • Top with a spoonful of your brown sugar peaches and a scoop of granola.
  • Repeat with another layer of yogurt and another layer of peaches.
  • Top with granola and enjoy!

Notes

Using frozen fruit: I would recommend thawing your fruit first and patting it dry before either adding it to you parfait or macerating it.
Meal prep: Layer your yogurt and fruit in a mason jar and screw on the lid. Put in your tote with an ice pack. Place your granola in a separate jar, or zip top bag, and combine the two when you are ready to eat. Can be made up to 2 days ahead.
