Korean Spice Mix  Ingredients

chicken thighs waffles buttermilk gochujang all-purpose flour cornstarch kosher salt black pepper unsalted butter maple syrup honey chives sesame seeds

Mix up a brine made of buttermilk, Korean Spice Mix, and gochujang and marinate your chicken for at least 1 hour

Dredge the chicken in a mixture of flour, cornstarch, and more of my Korean spice mix

Fry for 7 to 8 minutes, or until 165°F inside. Let cool, then fry another 2 minutes

The double fry is the secret to extra crispy Korean Fried Chicken. The first fry cooks the chicken and the breading. The second fry cooks off the excess water produced during the first fry. In this way, Korean Fried Chicken stays crispy, even after adding a sauce or glaze!
