For the Glazed Donut Syrup:

  • 1 glazed donut stale - homemade or store-bought
  • 1 cup water
  • 1 cup granulated sugar
  • 1 whole nutmeg or ¼ teaspoon ground nutmeg
  • ½ teaspoon vanilla extract

For the Latte:

  • 2 ounces espresso or strong brewed coffee
  • 6 ounces whole milk or milk alternative
  • 1 to 2 tablespoons glazed donut syrup
  • Vanilla sugar nutmeg, or whipped cream and sprinkles for garnish

  • Make the syrup: Combine water and sugar in a small saucepan. Bring to a simmer and add some freshly grated nutmeg and the remaining nut.
  • Add cut stale donut pieces. Simmer 1 minute then remove from heat, cover, and steep 15 minutes. Strain, add vanilla, cool, and store.
  • Brew espresso: Brew a double shot, heat undiluted cold brew, or prepare strong coffee.
  • Heat and froth milk: Warm your milk until steaming but not boiling (about 150°F). Add one tablespoon of glazed donut syrup. Froth until foamy, about 30 to 60 seconds.
  • Assemble: Add 1 tablespoon syrup to mug, pour in espresso, stir, then add milk and spoon foam on top.
  • Garnish: Sprinkle vanilla sugar or nutmeg, or whipped cream + sprinkles and serve hot.

Notes

  • Use one of my homemade yeast donuts, a store-bought glazed donut, or a commercial donut syrup.
  • Store syrup in the fridge up to 2 weeks. Adjust syrup amount to taste.
