This cozy coffee combines rich espresso, steamed milk, and a sweet homemade syrup made with an actual glazed donut. It tastes like a bakery and a cafe had a brunch date right in your kitchen.

I created this recipe by experimenting with ways to capture the flavor of a classic glazed donut in liquid form. The result is a creamy, slightly toasty latte that brings together everything you love about coffee and donuts - all in one mug.

  • Espresso - A double shot of espresso gives the best flavor. Strong brewed coffee or undiluted cold brew also works.
  • Milk - Whole milk produces the creamiest froth. Use oat, almond, or soy milk for dairy-free alternatives, although oat milk froths the best.
  • Glazed Donut Syrup (1 to 2 tablespoons) - Made by infusing a glazed donut into simple syrup. You can use one of my homemade yeast donuts, a store-bought glazed donut, or commercial glazed donut syrup if you prefer convenience.
  • Vanilla and nutmeg - For a touch of sweetness and warmth, these two ingredients just scream donut.

Step-by-Step Instructions

Making this latte is simple and quick. Follow these steps and you'll have a barista-style drink ready in minutes.

Making glazed donut syrup

Placing a whole nutmeg into simple syrup.

Step 1: In a small saucepan, combine 1 cup water and 1 cup sugar. Heat until the sugar dissolves, then grate in a little fresh nutmeg, then drop the rest of it in.

Step 2: Then add the donut pieces. Simmer gently for 1 minute. Remove from heat, cover, and steep for 15 minutes.

Step 3: Strain through a fine mesh sieve or coffee filter and add vanilla. Cool completely in the refrigerator and then skim off any solid fat (from the frying process).

Step 4: Transfer to a sealable container and store in the fridge for up to 2 weeks.

Step 1: Warm your milk until steaming but not boiling (about 150°F). Add one tablespoon of glazed donut syrup.

Using a milk froth or to foam steamed milk.

Step 2: Froth with a milk frother until foamy and doubled in volume.

Step 3: Pour one to two tablespoons of donut syrup in a mug (start with 1 tablespoon).

Step 4: Pour in the hot espresso and stir well to combine. Taste and adjust sweetness with more syrup if desired.

Step 5: Pour the hot milk into the mug, holding back the foam with a spoon.

Step 6: Then spoon the foam on top.

Finish: Sprinkle a little vanilla sugar or nutmeg over the top, or really indulge in the moment and add a little whipped cream + sprinkles on top and garnish with a glazed mini donut. Serve immediately while hot and aromatic. Don't forget to eat your donut.

How to Make an Iced Glazed Donut Latte

You can easily turn this into an glazed donut iced latte:

  1. Brew 2 shots (2 ounces) of espresso and let it cool.
  2. Fill a tall glass with ice.
  3. Add 1 tablespoon of glazed donut syrup to the cooled espresso. Stir well. Pour over the ice.
  4. Add another tablespoon of syrup to 6 ounces of milk. Pour in cold milk, leaving room for foam if desired.
  5. Froth a small amount of the milk and spoon it over the top.
  6. Add whipped cream and sprinkles and a mini donut on a straw because you're fun like that.

You can use undiluted cold brew coffee or even leftover strong brewed coffee instead of espresso.

Cynthia's Helpful Tips

  • Syrup storage - Keep homemade donut syrup in the fridge up to 2 weeks.
  • Fresh espresso - Brew right before assembling to preserve crema.
  • Milk temperature - Don't overheat or it will scorch, lose flavor, and be more difficult to froth.
  • Foam control - For a creamy texture, froth until microfoam forms with small, even bubbles, about 30 to 60 seconds.
  • Shake it up - If you don't have a handheld milk frother, you can pour warm milk into a jar with a lid and shake until foamy, about 30 to 60 seconds. Then microwave the milk for another 30 seconds to heat it even more (about 150°F) and stabilize the foam.
  • Flavor boost - Add a touch of vanilla extract to the syrup for even more donut glaze flavor.

Can I use regular coffee instead of espresso?

Yes. Just brew it very strong or use cold brew for the iced version.

Can I use store-bought syrup?

Yes, commercial donut or vanilla syrup works if you're short on time.

Ingredients
 

For the Glazed Donut Syrup:

  • 1 glazed donut stale - homemade or store-bought
  • 1 cup water
  • 1 cup granulated sugar
  • 1 whole nutmeg or ¼ teaspoon ground nutmeg
  • ½ teaspoon vanilla extract

For the Latte:

  • 2 ounces espresso or strong brewed coffee
  • 6 ounces whole milk or milk alternative
  • 1 to 2 tablespoons glazed donut syrup
  • Vanilla sugar nutmeg, or whipped cream and sprinkles for garnish

  • Make the syrup: Combine water and sugar in a small saucepan. Bring to a simmer and add some freshly grated nutmeg and the remaining nut.
  • Add cut stale donut pieces. Simmer 1 minute then remove from heat, cover, and steep 15 minutes. Strain, add vanilla, cool, and store.
  • Brew espresso: Brew a double shot, heat undiluted cold brew, or prepare strong coffee.
  • Heat and froth milk: Warm your milk until steaming but not boiling (about 150°F). Add one tablespoon of glazed donut syrup. Froth until foamy, about 30 to 60 seconds.
  • Assemble: Add 1 tablespoon syrup to mug, pour in espresso, stir, then add milk and spoon foam on top.
