How to Make No-Knead Crusty Dinner Rolls

Only 4 Main Ingredients, Including water!

Rolls bake for about 20 minutes

No mixer needed


Bread flour

kosher salt

warm water

instant yeast

Add warm water to  flour, salt, and yeast.

Mix together into a shaggy, sticky dough. Cover with plastic and leave it alone for 12 to 18 hours. Go to bed!

Divide your dough into 8 pieces.

I use a kitchen scale to make sure they're all the same size.

Flatten each piece on your counter and bring all the sides together on top, like a drawstring purse.

Flip seam side down and roll each piece of dough against your counter in your cupped hand to form balls.

Let balls rest and preheat oven to 500°F

To help ensure crispier crusts, I like to place a pan of hot water on the bottom shelf of the oven while the oven preheats and leave it in while the rolls bake.

If desired, score each ball with a bread lame, razor, or a sharp knife,

Place on parchment paper on the back of a sheet pan. Turn oven down to 450°F and bake for 16 to 20 minutes.

Schmear with butter or jam or (my favorite) dip into a creamy soup!
