Ingredients

flour yeast salt water

Add warm water to  flour, salt, and yeast.

Mix together into a shaggy, sticky dough. Cover with plastic and leave it on the counter for 12 hours

You can also leave the dough covered in your refrigerator for up to 3 days before baking

Divide your dough into 8 equal pieces

Use a scale for accuracy!

Flatten each piece on your counter and bring all the sides together on top, like a drawstring purse.

Flip seam side down and roll each piece of dough against your counter in your cupped hand to form balls.

If you're feeling fancy, use a knife, or razor to score your rolls to control their expansion and make them pretty

Preheat your oven to 500°F while you allow the rolls to rest for 45 minutes

To help ensure crispier crusts, I like to place a pan of hot water on the bottom shelf of the oven while the oven preheats and leave it in while the rolls bake.

Place rolls on parchment paper on the back of a sheet pan. Turn oven down to 450°F and bake for 16 to 20 minutes.
