Start your Lemon Poppy Seed Waffles by zesting a lemon directly into sugar and mixing

Whisk the zesty sugar together with the rest of the dry ingredients.

Next combine all of the wet ingredients. Adding the poppy seeds now allows them to hydrate and release their nutty flavor

Combine your wet and dry ingredients and let the batter rest for 10 minutes while you preheat your waffle maker.

I prefer to use an ice cream scoop to portion my batter then cook until golden brown  and crispy!

Stack 'em up, add butter and syrup, and dig in!
