To keep this to one bowl, I recommend using an inexpensive kitchen scale to weigh your ingredients. I include gram measurements for the major ingredients, although standard measurements are included as well.

- Bananas - Very ripe bananas with lots of brown spots will give you the best flavor and sweetness. If your bananas are still a little too yellow, wait another day if you can. If you find them becoming over ripe but you don't have time to make banana bread today, put them in the freezer and let them thaw overnight in the refrigerator.
- Greek yogurt - This adds moisture and tenderness. Regular yogurt or sour cream works beautifully here too. Sometimes I'll use a vanilla yogurt and skip the added vanilla.
- Vegetable oil - Keeps the loaf soft and moist for days. You can also use another neutral oil or you can swap out for melted butter.
- Brown sugar - Adds sweetness and a little deeper flavor than white sugar. Light or dark brown sugar both work, or you can absolutely use white granulated sugar for a lighter flavored loaf.

- Baking powder + baking soda - This combo gives the bread lift and helps it bake up with a soft crumb and nice domed top. Don't skip or substitute and be sure to check your expiration dates to ensure a good rise to your loaf.

This is a very forgiving banana bread recipe, so do not overthink it. Follow along with the process photos and you will be in excellent shape.

Step 1: Preheat your oven to 425°F. Spray a 9-inch loaf pan with nonstick spray. Line the greased loaf pan with parchment paper, leaving some overhang on the sides to use as a sling later.

Step 2: Add the bananas to a large mixing bowl and mash to your preferred texture. Some people like it mostly smooth, some like a few small lumps. Both are correct. Add the eggs, Greek yogurt, vegetable oil, and vanilla extract. Whisk until smooth and fully combined.

Step 3: Add the brown sugar, baking powder, baking soda, and kosher salt. Whisk well, making sure to break up any lumps of brown sugar.

Step 4: Add the flour and stir just until the batter is mostly combined, with a few streaks of flour still visible.

Step 5: Fold in any mix-ins you want to use, then let the batter rest for 15 minutes so the flour can fully hydrate and the loaf bakes up with a better texture.

Step 6: Transfer the batter to your prepared loaf pan and smooth the top. Spray a sharp knife with nonstick spray and drag it lightly through the center of the batter to encourage that classic banana bread split.

Bake: Bake at 425°F for 5 minutes. Then, without opening the oven door, reduce the oven temperature to 350°F and continue baking for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. Cool on a wire rack.
Cynthia's Helpful Tips
- Ripeness - The darker and spottier your bananas are, the better your banana bread will taste. My favorite hack is to freeze the bananas when they become ripe and save them for the perfect banana day morning. The bananas will actually liquefy in the peel so you almost don't need to mash them.
- Resting - Do not skip the 15-minute batter rest. It helps the flour hydrate and gives you a softer, more even crumb.
- Mix-ins - Stick to drier add-ins like chocolate chips, nuts, shredded coconut, or spices. Very wet add-ins can throw off the texture.
- Give it some bling - Sprinkle the top with coarse sugar before baking for a crackly bakery-style finish that looks extra cute on a brunch table. We do eat with our eyes first!
- Pan prep - Parchment paper makes it much easier to lift the loaf out cleanly, especially if you are adding sticky mix-ins.
- Oven temp - Starting the loaf at 425°F gives it a better rise and helps create that classic banana bread split before the lower baking temperature finishes it gently.
- Doneness - Banana bread can look done on top before the center is ready. Always test the middle of the loaf before pulling it from the oven.
