Holiday mornings, brunch parties, or random Tuesday nights when you are staring into the fridge and wondering what on earth to make... this Easy Sheet Pan Frittata has your back. It is my favorite way to turn leftovers and odds and ends into something warm, colorful, and honestly pretty impressive. It bakes in about 20 to 25 minutes, feeds a crowd, and is wide open to whatever you want to toss in.

This Easy Sheet Pan Frittata is built to be customized. Use the ingredients in my version as a guide, or grab whatever vegetables, cheeses, and proteins you love. The best part is how well it works for make ahead prep. All the filling ingredients can be cooked the night before or collected from leftover roasted vegetables, cooked bacon or ham, and even scraps of cheese.

Ingredients & Subsitutions

Simple ingredients often make the best food and the photo below shows all you need to make this amazing Sheet Pan Frittata, but remember, this is only my suggestion. You can add whatever you like to make this frittata your own! Let's go over my ingredients and a few ways you can swap them if needed:

  • Bacon - Use cooked sausage, ham, or keep it vegetarian.
  • Onion - Shallots or sliced leeks work well.
  • Mushrooms - Any type of mushroom or roasted vegetables.
  • Spinach - Kale or swiss chard also work.
  • Sun-dried tomatoes - Roasted red peppers or halved cherry tomatoes will work too.
  • Ricotta cheese - I love to use my homemade ricotta cheese but store-bought is fine. You sub with goat cheese, cottage cheese, or cream cheese.
  • Eggs - No substitute for the structure, but you can increase to 8 or 12 for larger pans.
  • Heavy cream - Use half and half or whole milk.
  • Gruyere cheese - Swiss, cheddar, or Monterey jack will work great too.

Variations

The thing I love most about a frittata is that you can make it your own based on what you have in your fridge and pantry! It can truly be a clean-out-the-fridge situation, or try one of these versions:

  • Italian - One of the most requested frittatas at the bakery, my Italian Frittata has mozzarella, artichoke hearts, italian seasoning, and fresh Italian herbs!
  • Everything Bagel- My Smoked Salmon Frittata has all the flavors of a bagel with lox, including red onion, capers, tomatoes, and of course smoked salmon. Amazing!
  • Southwest Frittata - Add chopped green chiles, pepper jack cheese, and cooked chorizo.
  • Grab-and-go - Pour your frittata mix into a well-greased muffin pan for the most adorable, and portable, Muffin Tin Frittatas!
  • Holiday Brunch Frittata - Double the recipe and bake in a large sheet pan to feed a crowd.

Cynthia's Recipe Review

This Sheet Pan Frittata is my favorite kind of breakfast: flexible, colorful, and basically foolproof. Every time I make it, I end up with a new combination that becomes my new favorite. This particular frittata was so good that I had to stop The Boy from eating it all in one sitting or he wouldn't have any for dinner when he got home from work.

Instructions

All of the steps to making your Sheet Pan Frittata, before adding the egg mixture to the sautéed ingredients, can be done the night before. All you have to do in the morning is preheat the oven while you assemble and put it in to bake. Go take a shower. Have a cup of coffee. Relax, breakfast is almost ready!

  • Start by preheating your oven to 375°F Prepare your small sheet pan by spraying it with nonstick cooking spray or lining it with parchment paper (or both).

Step 1: Start by preparing your ingredients. For this frittata, I sliced my onion, mushrooms, and bacon. I also cut and drained the sun-dried tomatoes and cut them into small strips.

Step 2: In a skillet set over medium heat, I started by sautéing my bacon until almost crispy, and removing a small amount to finish my frittata. I then let the rest of the bacon cook for another minute and then put it into my prepared sheet pan.

Step 3: In the same pan, I sautéed my sliced onion with a pinch of salt and pepper along with a small pinch of sugar. I cooked them just until softened and turning a nice golden brown. A bit was set aside, and the rest was added to the bacon in the sheet pan.

Step 4: Then I sautéed my mushrooms in the same pan, waiting to season with salt and pepper until they were golden brown, setting some aside and adding the rest to the sheet pan.

Step 5: Finally, I sautéed my spinach until just barely wilted, saving some, while adding the rest of the sheet pan.

Step 6: I like to use a set of chopsticks to arrange everything on the sheet pan so that the fillings are as evenly distributed as possible.

Step 7: Then I added most of my shredded cheese, saving some for the top. I whisked my eggs with heavy cream and carefully poured it over everything.

Step 8: Then I added the rest of the shredded cheese and dollops of ricotta cheese wherever I could. I nestled my sun-dried tomatoes in the egg mixture and used my chopsticks to make sure everything was nicely arranged.

Bake: Bake your sheet pan frittata in a preheated 375°F oven for between 20 to 25 minutes or until a knife or skewer inserted into the very center comes back clean. Allow to rest and set for at least 15 minutes before slicing in.

Cynthia's Helpful Tips

  • Prep Ahead - All fillings can be cooked 1 to 2 days ahead.
  • Cook Ingredients - Roast or saute veggies so they do not water down the eggs.
  • Even Layers - Spread fillings evenly so each slice has a little bit of everything.
  • Double It - Use a larger sheet pan and double the recipe for big gatherings.
  • Slice Cleanly - Let it rest 10 minutes so it completely sets and slices neatly.

Accessorize your eggs - Try putting your frittata in little pie crusts like I did with my Quiche in a Muffin Pan. Like an edible coaster for your eggs!

Serving Suggestion

Whether you serve this for breakfast, brunch, or even breakfast for dinner, it always goes well with a crisp green salad or even a light tomato salad. I like to make a simple salad ahead and keep it in the refrigerator so that when The Boy comes home at midnight from working at the hospital he can warm up a slice of frittata and have his healthy greens on the side. He thinks a lot at work, and this comes together with hardly any thinking at all.

Recipe FAQ's

Can I make this the night before?

Yes. You can prep all the fillings up to 2 days ahead, but do not mix the eggs until you are ready to bake or your frittata may not bake up as fluffy.

How long can I keep the frittata out on the counter?

A cooked frittata can be kept at room temperature for up to one hour. After that it should be covered and refrigerated for up to 4 days.

How do I store leftovers?

Store fully cooled slices in an airtight container for up to 4 days. I like to place a piece of parchment paper or aluminum foil between the slices so they don't stick together.

How do I reheat leftover frittata?

I find that a cold frittata is just as delicious as a warm one, but if you prefer it warm, heat in a microwave until warm, about 45 seconds to a minute or in a 300°F oven for 10 to 12 minutes.

Are frittatas just for breakfast?

Absolutely not! As much as I love eating a frittata on its own or sliding a slice between the layers of a flaky biscuit, it is just as delicious served alongside a salad for lunch or dinner.

Ingredients
 

  • 6 slices bacon diced
  • ½ onion sliced
  • 10 cremini mushrooms sliced
  • 1 cup baby spinach
  • ¼ cup sun dried tomatoes drained and sliced
  • ¼ cup ricotta cheese
  • 6 large eggs
  • ½ cup heavy cream or half and half
  • 3 ounces gruyere cheese shredded
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Pinch of sugar

Instructions

  • Preheat oven to 375°F. Grease or line a small sheet pan with parchment paper.
  • Cook bacon until almost crisp. Reserve a small amount for topping and place the rest in the sheet pan.
  • Saute onions with salt, pepper, and sugar. Reserve some for topping and add the rest to the pan.
  • Saute mushrooms until browned. Reserve some for topping and add the rest to the pan.
  • Saute spinach until wilted. Reserve some for topping and add the rest to the pan.
  • Spread fillings evenly and sprinkle most of the shredded cheese over top.
  • Whisk eggs, heavy cream, salt, and pepper. Pour gently over the fillings.
  • Add dollops of ricotta and top with remaining cheese, saved toppings, and sun dried tomatoes.
  • Bake 20 to 25 minutes, or until a skewer inserted in the center comes out clean.
  • Cool for 15 minutes before slicing and serving.

I love that you can use this as a base recipe and modify fillings and it still turns out really good. I just used what we had on hand- diced ham, red bell pepper, spinach and feta. So easy to make on the weekend to have for grab and go breakfasts for the week! Yum!
