If your social feed has been taken over by the Costco Blueberry Caramelized Cheesecake Croissant, you are not alone. This homemade version delivers everything people love about the viral pastry but uses a muffin pan, easy-to-find ingredients, and takes less than an hour from start to finish.

This Blueberry Caramelized Cheesecake Croissant recipe was developed after seeing the pastry everywhere online and wanting a version that didn't require a Costco membership and felt achievable for all of you to make at home. By baking them in a muffin pan, you get tall, bakery-style layers with a caramelized exterior and a soft, cheesecake-filled center, almost like a croissant meets a blueberry cheesecake meets a classic cheese danish.
I use my homemade rough puff pastry and blueberry jam, but this recipe is intentionally flexible. Store-bought puff pastry works beautifully, no-bake cheesecake filling is a great shortcut, and you can use fresh blueberries, frozen blueberries, or your favorite jam. The result is a blueberry cheesecake croissant that is just as impressive, easier to make, and honestly even better than the Costco one.

Why you'll love this recipe
- Bakery-style - Flaky puff pastry and creamy cheesecake filling bake up tall and golden in a muffin pan.
- Better-than-Costco - You control the quality of ingredients, the lemony cheesecake flavor, and the blueberry filling.
- Approachable - No special tools, no laminating dough, and no advanced pastry skills required.
- Flexible - Use homemade or store-bought puff pastry, jam or fresh fruit, and even store-bought cheesecake filling.
- Quick payoff - Less than an hour from start to finish with minimal hands-on time.
Flaky, creamy, and just sweet enough, these homemade pastries disappear faster than the Costco ones ever could.
Ingredients & Substitutions
The photo below shows everything you need to make these blueberry caramelized cheesecake croissants. Below are the key ingredients and easy substitutions so you can make them work with what you have.

- Puff pastry - I use homemade rough puff, but frozen or refrigerated store-bought puff pastry works perfectly.
- Cream cheese - Full-fat cream cheese gives the best texture, but you can substitute a refrigerated no-bake cheesecake filling to save time.
- Blueberry jam - Homemade blueberry jam adds depth, but store-bought jam or preserves work just as well.
- Blueberries - Fresh or frozen blueberries both work. You can also skip the jam entirely and use only fresh berries.
- Lemon zest and juice - Adds brightness and balances the richness of the cheesecake. Orange zest also works nicely.

- Cinnamon Sugar - Replace the crumb topping with cinnamon sugar for a simpler, croissant-style finish.

Step-by-Step Instructions
Puff pastry recipes are very forgiving, and the muffin pan does most of the work for you. Follow along with the steps and process photos, and you will have bakery-style pastries with very little stress.

Step 1: Preheat the oven to 400 F. Spray each muffin well generously with nonstick spray and brush with melted butter. Sprinkle about ½ teaspoon sugar into each well and rotate the pan so the sugar coats the sides. Tap out excess.

Step 2: Make the crumb topping by combining flour, sugar, and salt in a bowl. Cut in the butter until crumbly. Set aside.

Step 3: Rub lemon zest into the sugar with your fingers.

Step 4: Add cream cheese, egg, lemon juice, and salt. Beat with a hand mixer until light and fluffy, about 2 to 3 minutes.

Step 5: Roll or trim the puff pastry into an 11 x 14 inch rectangle. Lay it over the muffin pan and gently press indentations where each muffin well sits.

Step 6: Divide the cheesecake filling evenly among the 12 wells. Make a small indentation in the center of each and add about 1 teaspoon jam and 3 to 4 blueberries.

Step 7: Sprinkle crumb topping over each pastry. Cut the puff pastry between wells and fold the corners over the filling so each pastry drops into the muffin well.

Step 8: Brush exposed pastry with egg wash and sprinkle with additional crumb topping.

Step 9: Bake for 15 to 18 minutes, until puffed and deeply golden. Let cool in the pan for 5 minutes. Run a butter knife or offset spatula around each pastry and carefully remove each pastry to a parchment paper-lined rack to cool completely.

Serve warm or at room temperature on their own or with coffee. The caramelized sugar crust sets as they cool, giving you that signature crackly exterior that everyone craves.
Make-ahead and freezer instructions
These blueberry cheesecake croissants can be assembled ahead of time and frozen before baking. Assemble the pastries completely but do not add the egg wash or the final crumb topping.
Skip the butter and sugar in the pan and freeze them in the muffin pan until solid. Transfer to an airtight container or freezer bag for up to 1 month, along with the remaining crumb topping.
When ready to bake, return the frozen pastries to a prepared muffin pan, brush with egg wash, add the remaining crumb topping, and bake straight from frozen, adding 3 to 5 minutes to the baking time.

Cynthia's Helpful Tips
- Sticking fears - I highly stress that you spritz at least the bottom of each muffin well with nonstick spray before brushing with butter. If you are still worried about sticking, line the muffin wells with paper liners, spritz lightly with nonstick spray, and sprinkle with sugar to mimic the caramelized exterior.
- Even filling - Use a medium scoop to divide the cheesecake filling evenly for uniform pastries.
- Jam control - Keep the jam in the center so it does not bubble over and burn.
- Golden color - Do not skip the egg wash. It helps the puff pastry brown evenly and look bakery-perfect.
- Timing matters - Remove the pastries after 5 minutes of cooling so the sugar sets without sticking.

- ¾ cup (90 g) all-purpose flour
- ¼ cup (50 g) granulated sugar
- 3 tablespoons (42 g) unsalted butter cubed
- Pinch of salt
For the Pan
- Butter or nonstick spray
- 1 tablespoon granulated sugar
Cheesecake Filling
- 1 tablespoon lemon zest
- ¼ cup granulated sugar
- 8 ounces (226 g) cream cheese softened to room temperature
- 1 large egg
- 1 tablespoon lemon juice
- Pinch of salt
Pastry and Topping
- 1 (14 oz) sheet puff pastry thawed if frozen
- 1 cup blueberries fresh or frozen
- ¼ cup blueberry jam
- 1 large egg
- 1 tablespoon water
Instructions
- Preheat oven to 400°F. Prepare muffin pan by spritzing with nonstick spray and then brushing with butter. Add sugar to each well and turn the pan to coat the sides. Tap out excess into sink or trash bin.
- Combine flour, granulated sugar, and a pinch of salt in a medium bowl. Add 3 tablespoons of unsalted butter, cut into small cubes. Work the butter into the other ingredients with your fingers or a pastry cutter until you have a crumbly texture. Set aside.
- In another mixing bowl combine granulated sugar with lemon zest and use your fingers to rub the zest and sugar together. Add the softened cream cheese, egg, lemon juice, and a tiny pinch of salt. Use a hand mixer to mix together until light and fluffy, about 2 to 3 minutes.
- Roll or trim puff pastry to 11 x 14 inches and lay over muffin pan. Make shallow indentations in the puff pastry to determine where to place your cream cheese.
- Divide cheesecake filling among wells. Add a teaspoon of jam and a few blueberries on top.
- Sprinkle with half of the crumb topping and cut pastry between each muffin well. Fold corners of the puff pastry inward. The pastry should fall to the bottom of the muffin well.
- Brush pastry with egg wash and sprinkle remaining crumb topping.
- Bake 15 to 18 minutes until golden.
- Cool 5 minutes in the pan, then remove and cool completely on a wire rack lined with parchment paper.

OMGoodness! This recipe is genius! Thank you so much for sharing!!!! Easy to follow and so, so, so delicious! I've not tasted the Costco croissant and I have no need to after making your version. I didn't use jam in the recipe, but did cook, sweeten, thicken, and cool the blueberries - used frozen. Other than not having b-berry jam, I had everything else available. Wow! Perfect! 🙂
I'm so glad you enjoyed the recipe and made it your own!
These were easy to make (used store bought puff pastry and blueberry jam as well as fresh berries) and everyone loved them - kids and adults:). I have never tried the costco version but I plan on making these again soon!
I'm so glad you all liked them!
