It’s made with tangy-sweet blood orange simple syrup, bubbly sparkling apple cider, and a splash of sparkling water for that extra nose tickle.

Ingredients & Substitutions
These are the ingredients you need to make a delicious non-alcoholic blood orange spritz. We'll be making our own simple syrup, which as a name implies is very simple. Let's go over the ingredients and how you can make any needed changes:
- Blood orange - It wouldn't be a blood orange mimosa if we didn't use blood oranges. In season from December through March, if it's out of that timeframe and they are unavailable, feel free to use your favorite citrus like orange for a classic mimosa mocktail, or grapefruit for a Paloma vibe.
- Sparkling apple cider - A classic mimosa uses champagne or prosecco, but we are going with nonalcoholic sparkling apple cider. You can also use sparkling grape juice or take the sweetness out completely and just fill your cup with more bubbly water.
- Sparkling water - I am not fussy about my bubbly water. I will use whatever's on sale. You can use tonic water, club soda, ginger ale… whatever you have on hand that has bubbles.
- Lemon - During testing, my daughter suggested that the drink needed a little bit of acid to balance the sweetness, and she was right! I added a squeeze of lemon and it was perfect. Using the lemon to wet the rim before adding the spicy sugar is just a bonus. Lime would work great as well.
- Tajin & sugar - Tajin is a Mexican condiment made of dried lime, chili peppers, and salt. It gets mixed with sugar and then you simply flip the glass upside down and dip it into the Tajin sugar to create a nice even rim.

How to Rim a Glass
Be the drama - You don't have to settle for just having a standard sugared rim in this mimosa mocktail recipe. You can design it any way you want. Have a partial rim or have a dramatic rim. Here's how:
Step 1: Rub the rim of your mocktail glass with a wedge of lemon, or moisten with water or more simple syrup.
Step 2: Dip the rim into tajin sugar, coating evenly.
- If you prefer a clean area for drinking, swipe only half of the rim with your lemon wedge and then dip in the Tajin sugar.
- If you want all the drama, extend the moistened area to about 1-2 inches down the edge of the glass for a dramatic look. Then turn your glass on the prepped side and gently roll it in your plate of rimming ingredients instead of dipping.
- Serving a crowd? Prep all your glassware with rims ahead of time to save time during your cocktail party.
- To avoid smudging your beautiful rims, use a funnel to pour your drink neatly into the center of the glass.
- Add ice (if using) after pouring, and you're ready to serve!

Step-by-Step Instructions
Making simple syrup is literally simple. It's just dissolving sugar into a liquid, in this case blood orange juice. It took about 6 blood oranges for me to get one cup of juice, but it varies, depending on the size of your fruit. Buy extra anyway because they're delicious for eating as well.
Caution: watch out for blood orange juice splatter. Wear an apron… or a raincoat.
Make blood orange simple syrup
Step 1: Use a vegetable peeler to peel just the orange portion off of one blood orange.
Step 2: Add the blood orange peels, granulated sugar, and blood orange juice to a small saucepan and simmer until the sugar is completely dissolved. Strain and store in a clean glass jar in the refrigerator for up to two weeks.
Make one blood orange mimosa mocktail
Step 3: Follow the instructions above to rim your glass. Add ice and squeeze in one wedge of lemon. Add to the glass if desired.
Step 4: Pour in 3 tablespoons, up to 4 tablespoons, of blood orange simple syrup.
Step 5: Fill the glass approximately 2⁄3 full with sparkling cider.
Step 6: Top off the glass with a little bubbly water.
Step 7: Stir to combine. Yes, I'm using a chopstick. It's a perfect fit!
Step 8: Garnish the rim with a slice of blood orange.
You could also simply float a slice of blood orange on top of your drink, then sip and enjoy!

Ingredients
Blood Orange Simple Syrup
- 1 cup blood orange juice from 4 to 6 blood oranges
- Peeled zest of one blood orange
- 1 cup granulated sugar
Tajin sugar rim
- 2 tablespoons granulated sugar
- 1 tablespoon Tajin
One Mimosa Mocktail:
- 1 teaspoon lemon juice from one wedge (optional, for balance)
- Ice cubes
- 3 tablespoon blood orange simple syrup
- 4 ounces sparkling apple cider
- 2 ounces sparkling water or other bubbly drink
Instructions
Make blood orange simple syrup
- Use a vegetable peeler to peel just the orange portion off of one blood orange.

Prepare the Glasses

Mix the Drink
- Fill glass halfway with ice. Squeeze the lemon wedge into the glass and either add to the glass or discard.
- Pour the blood orange simple syrup into the glass.
- Fill ⅔ full with sparkling apple cider.
- Top with club soda or some type of bubbly water. Stir gently.
- Garnish with a thin slice of blood orange on the rim.
